Super Simple Crab and Avocado Tacos
If it weren’t for Indian and Mexican food, I might starve to death! I could eat tacos nearly every day of my life and sometimes, I do, in one form or another. Featured here is one of my most favorite tacos. I typically choose the butter lettuce wrap but it’s up to you and what’s right for your body type! This recipe is simple yet different enough to keep me interested!
Super Simple Crab and Avocado Tacos
Serves: 2 (2 tacos per person)
Prep Time: 5 minutes
Cook Time: 10 minutes
Total: 15 minutes
Ingredients:
For the crab meat:
– 2 cans Crown Prince Natural White-Lump Crab Meat (Substitute equivalent amount of tofu if desired.)
– 1 tsp. cumin
– 1/2 tsp. sea salt
– Juice of one lime
– 1/2 tsp. chili powder
– 1/2 tsp paprika
– 1/2 tsp. black pepper
– 1/2 tsp garlic powder
– 1 Tbs. coconut oil (or oil of your choice)
– 1 Tsp. white distilled vinegar
– 1 Tbs. chopped cilantro
– 2 Tbs. tomatillo puree (optional)
For the salsa:
– 1/2 cup cherry or plum tomatoes
– 1/4 cup onion
– 1/4 cup cilantro
– Juice of one lemon
– 2 cloves garlic
– 1 tsp. cumin
– Juice of one lime
For the wrap and garnish:
– Non-GMO Organic Corn tortillas or Butter Lettuce individual leaf wraps
– 1 sliced avocado
– Chopped cilantro
Instructions:
1. In a medium sized frying pan, sauté all crab meat ingredients on medium heat for 5-10 minutes
2. In a food processor, blend all salsa ingredients
3. Scoop crab meat into corn tortillas or butter lettuce wraps
4. Top with salsa, avocado slices and cilantro
Pair with: black beans, Mexican spiced riced cauliflower and Watermelon Lemonade
